FESTIVE CHOC PEANUT ROCKY ROAD

TOTAL PREP TIME: 20 mins (Plus chill time)

WHAT YOU NEED:
  • 1 pack of Kez’s Kitchen Choc Peanut Florentines, roughly chopped
  • 200g good quality milk chocolate
  • 200g good quality dark chocolate
  • 200g good quality white chocolate
  • 1 cup of white marshmallows (look for an ingredient list of just sugar, water and gelatine to ensure they’re gluten free)
  • 1/3 cup of pistachios
  • Red chocolate buttons & silver cachous to decorate
WHAT TO DO:

  1. Combine your dry ingredients (Florentines, marshmallows and nuts) in a large bowl

  2. Melt the milk and dark chocolate together in 20-30 second intervals in the microwave

  3. Cool the melted chocolate slightly before pouring over dry ingredients (to prevent marshmallows melting) and stir to combine well

  4. Pour into a lined tray, pressing down with a spatula or spoon. Transfer to fridge.

  5. In a clean bowl, melt your white chocolate in 20-30 second intervals in the microwave.

  6. Top the slightly chilled rocky road with the melted white chocolate, and decorate with buttons and cachous

  7. Return to the fridge for 2 hours or until set

  8. Remove rocky road before cutting into squares using a warm sharp knife (allowing it to sit for 15-30 mins at room temperature will make this much easier)
