What you need
Salad
1 Packet Green Tea Soba Noodles (cooked as per packet directions)
100g Mixed Leaves
200g Raw Tuna (sashimi grade) cubed
200g raw salmon (sashimi grade) cubed
2 Lebanese Cucumbers, deseeded and cut into half moons
1 Avocado, cubed
2 Spring Onions, sliced
Dressing
½ cup Ponzu
2 tsps Grated Ginger
1 tbs Kecap Manis
2 tsps Sesame Oil
Garnish
Roasted Sesame seeds
Wasabi Peas
Fried Shallots
What to do
1. Place Soba Noodles on a large platter.
2. Mixed through Leaves.
3. Top with Sashimi and Salad ingredients.
4. Mix all dressing ingredients together and drizzle over salad.
5. Garnish with Sesame Seeds, Fried Shallots and Wasabi Peas.
Tip
To make easy work of this, ask you fishmonger to cube the fish for you. This also works beautifully with cooked salmon pieces if you prefer.
