Gluten Free Cookies and Cream Ice Cream Sandwiches

A fun activity with the kids

Best Results: Freeze Overnight

What you need:

  1. Ice Cream Sandwiches
    2 x Kez’s Kitchen Gluten Free Mixed Favourites 180g packets (Health Aisle)
    1 x Kez’s Kitchen Gluten Free Melting Moment Ice Cream 473ml tub (Woolworths Gluten Free Freezer)
  2. Decorating Ideas
    100g Cooking Chocolate pieces to melt (makes approx. 6 halves dipped sandwiches)
    Cooking Oil as required (to thin Chocolate if required, we’ve used Vegetable Oil)
    ½ Cup Desiccated Coconut, (lightly toasted)
    ½ Cup Chopped Roasted Nuts (we’ve used Peanuts)
    Hundreds and Thousands

What to do:

  1. Use freezer safe tight lid container to place cookie sandwiches as you create them.
  2. Open Kez’s Kitchen Gluten Free Mixed Favourites cookie packs in preparation.
  3. Place the decorative elements in separate bowls large enough to roll the cookies in.
  4. Bring out Kez’s Kitchen Gluten Free Melting Moment Ice Cream tub and allow to stand. Note: Do not allow the ice cream to be out of the freezer any longer than 30 minutes as it will be too difficult to work with and begin to melt.

NOTE:

Use one packet of the Kez’s Kitchen Gluten Free Mixed Favourites for chocolate dipped ice cream sandwiches.

Use the second pack for non-chocolate dipped decorated ice cream sandwiches.

Process for Chocolate Dipped Ice Cream sandwiches

  1. Scoop a heaped tablespoon of Kez’s Kitchen Gluten Free Ice Cream and squash between two of your choice of the Kez’s Kitchen Gluten Free mixed favourite cookies – total of 6 sandwiches.
  2. Melt Chocolate in a microwave safe bowl as per pack instructions. If Chocolate is too thick add 1 tsp. of Cooking Oil and stir thoroughly. Keep adding Cooking Oil until Chocolate is the consistency of runny cream.
  3. Half dip the sandwiches in melted chocolate and roll the chocolate dipped side into your choice of Nuts / Hundreds and Thousands / Desiccated Coconut.
  4. Place in container and freeze while you prepare the remaining sandwiches.

Process for non-chocolate dipped Ice Cream sandwiches

  1. With remaining cookies, scoop a heaped tablespoon of Kez’s Kitchen Gluten Free Ice Cream and squash between two of your choice of the Kez’s Kitchen Gluten Free mixed favourite cookies and roll half side into your choice of Nuts / Hundreds and Thousands / Desiccated Coconut.
  2. Place the remaining sandwiches in the plastic container alongside the dipped sandwiches and freeze for best results overnight (or at a minimum of 4 hours).
