Raw Protein Balls

Ingredients
100g Cashews
100g Almonds
2 tbsp Linseed, Sunflower Seeds and/or Pepitas
170g Dates, pitted and chopped
100g Soft Dried Apricots
100g Prunes, pitted and chopped
1 tbsp Tahini
2 tbsp Cacao Powder
1 tbsp Ground cinnamon
2 tbsp Honey
Pinch of salt
100g Desiccated Coconut for coating

Method
Combine the Nuts and Seeds in a food processor and whiz until they form a fine crumb.
Add the Fruit and combine until the mix is smooth.
Add the Tahini, Cacao Powder, Cinnamon, Honey and Sea Salt then whizz until the mix starts to form into a ball.
Remove the mixture from the processor, roll into small balls then coat in Desiccated Coconut.
Place the balls into a container and store in the fridge.

Tips
You can substitute any nuts for another that you prefer such as Walnut.
Roast the nuts for a fresher flavour and a beautiful smell whilst blending. These can be added when still warm.
You can substitute any fruit for another that you prefer.
You can substitute Peanut Butter for the Tahini if you prefer the taste and are looking to boost the fats.
Wet your hands when rolling the mix into balls so the mix is less sticky.
For a higher protein level you can add 60g of your favourite protein powder into the mix but be mindful the mix will be stickier. I like to store mine in the freezer when adding protein powder to the mix.
