Race day picnic ideas

Spring racing is upon us, and it’s time to dust off the picnic basket and prepare for your race day feast. We’ve put together some race day winners that will keep the punters happy and give you enough time for that mani/pedi booking.

The most important thing to remember when packing for a picnic feast is to keep it simple. Only pack food that can be eaten with your fingers or just a fork. The other important point to remember is that it is often a very long day, so you will need lunch, morning and afternoon tea. And before you start making your menu plans, consider race event restrictions, as some events will not allow glass, knives and other such items brought onto the course. Check specific websites to get a heads up before packing your picnic.

MORNING TEA - KEZ’S KITCHEN TREATS

LUNCH

Lunch should be simple, hearty and fresh like this brown rice salad that you can serve in individual containers or jars, and you only need a fork to eat it.

Brown Rice Salad Recipe

Ingredients
3 cups cooked brown rice 
5 or 6 spring onions sliced
1 red capsicum finely diced
1/2 cup currants
2 tbsp sunflower seeds
2 tbsp pepitas
Add some shredded chicken to make them extra filling!
Dressing
1/4 cup sunflower oil
4 tbsp soy sauce
2 tbsp lemon juice fresh
1 garlic clove crushed

Method
Finely chop the capsicum and spring onion, combine with the cooked rice, currents, seeds and chicken.
Place in single serve size containers (cardboard noodle boxes are handy for this).
Combine dressing and place in separate jar.
When you are ready for lunch simply add your dressing to each serving.

AFTERNOON TEA

Cheese and fruit platter. You can’t go wrong with mixed fruit skewers to refresh the palate and a cheese platter with some gorgeous blue vein cheese or delicious camembert on crackers or pear slices.

Remember whatever your menu, keep it simple and easy to handle.
