Gluten Free Winter Dessert

Winter is all about staying in, reading and binge-watching Netflix and staying warm and cosy. It’s also a great time for a ‘cook up’ or to take the time to prepare desserts to comfort ourselves and our family and friends.
We love this magnificently easy and deliciously decadent gluten free orange cake. Try it and let us know what you think.

Gluten Free Orange Cake

Serves: 10

Prep time: 35 minutes.

What you need:

2 Oranges
3 Eggs
1 cup Caster Sugar
3 cups Almond Meal
1 teaspoon Gluten Free Baking Powder

1 Orange (use the peel and the juice)
¾ cup Caster Sugar

Melted Butter to grease the cake tin
Cream or Yoghurt to serve (optional)

What to do:

Preheat oven to 170C
Lightly grease a 22cm springform pan with melted butter.
Bring the Oranges to the boil in a saucepan, cook for 15 minutes and discard water.
Repeat the process and boil the Oranges a second time. This reduces any bitterness from the Oranges.
Roughly chop the Oranges or pop them in a food processor for a quick chop up.
Whisk Eggs until thick and pale.
In a separate bowl, add Caster Sugar, Oranges (cut up), Almond Meal, and Baking Powder and combine.
Fold these combined ingredients in to the beaten Eggs.
Pour into greased tin.
Place in the preheated oven and bake for an hour or until cooked.

While the cake is cooking use a zester (or peeler) to remove the rind from the fresh Orange. Remove pith and cut rind into fine strips.
Boil the rind until soft and return to a pan with the juice from the Orange and Caster Sugar and simmer until syrupy.

Once the cake is baked, allow to cool and carefully remove from cake tin.
Serve with warm orange syrup and a dollop of cream or yoghurt if you are feeling a little indulgent
