EASY GLUTEN FREE DESSERT IDEAS EVERYONE WILL LOVE
CHOCOLATE MOUSSE – SERVES 10
220g dark chocolate, chopped
7 eggs, separated, egg yolks beaten
1 1/2 tablespoons (30g) sugar
1 pinch salt
1 1/4 cups (300ml) thickened cream
Melt chocolate in a double boiler (or in a bowl over a pot of simmering water) until mostly melted. Remove from heat and stir until smooth. Set aside to cool slightly.
In a separate bowl, whip cream till medium stiff peaks form but do not allow it to become grainy. Set aside.
In a separate bowl, whip egg whites with salt until soft peaks form. Sprinkle in the sugar and continue whipping to medium stiff peaks. Fold in the beaten egg yolks.
Fold in the melted chocolate until completely incorporated, then fold in whipped cream and blend evenly.
Spoon into dessert cups or jars and chill until firm, about 1 hour. Serve with raspberries and a dollop of cream for extra decadence.
QUICK SERVE ICE CREAM - SERVES 4
300g frozen strawberries, or any frozen fruit (mango, blueberries, raspberries are great)
125g (1/2 cup) sugar
50ml (2/3 cup) thickened cream
Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped.
Slowly pour in the cream into food processor (or pour and blitz in batches) until fully incorporated. Serve with some cheeky dark chocolate sprinkles.
Eat fresh or freeze for up to one week.
HUMBLE BUT TASTY RICE PUDDING - SERVES 6
200g uncooked short-grain white rice
6 cups (1 1/2 litres) hot skim milk
1/2 teaspoon salt
100g caster sugar
1/4 teaspoon ground nutmeg
1 dessertspoon vanilla extract
In the top of a double boiler, stir together rice, milk, salt, sugar, sultanas and nutmeg. Cook, stirring occasionally, over simmering water for 1 hour until thick.
Stir in vanilla and serve warm or cold.
