Unsalted Butter 150 grams
Dark Brown Sugar 95 grams
Golden Syrup 270 grams
Egg x 1 (60 grams)
Self Raising Flour 375 grams
Plain Flour 405 grams
Bi Card Soda 3 grams
Ground Ginger 12 grams
All Spice 6 grams
Preheat oven to 160 degrees
Combine Butter, Sugar and Golden Syrup and mix well.
Add Egg and continue to mix (If egg breaks away from the mix don't worry)
Combine Flour, Bi Carb soda, and Spices and mix on low speed.
Wrap the dough in cling wrap or baking paper and refrigerate for an hour to help maintain cookie shape.
Roll out dough and cut desired shape.
Place on baking paper and bake for 17-20 minutes.
Leave on tray to cool completely.
Decorate with icing or chocolate and smarties.
Note: You can easily substitute the flour with Gluten Free Flour.
