Raw Cookie Recipes

Nice Cream Sandwiches (4 sandwiches)

Option 1 - using Coyo Ice Cream
Coyo ‘Nice Cream’ Sandwiches
Coyo Coconut Ice Cream (Flavour of your choice)
8 of Kez’s Kitchen Raw Cookies (Choc Nut or Peanut)
Scoop tablespoon sized balls of Coyo ice cream and squash
between two of Kez’s Kitchen Raw Cookies.

Option 2 - using Coyo Yoghurt
Coyo ‘Nice Cream’ Sandwiches (Overnight preparation)
200ml Coyo Vanilla Bean and Nutmeg Coconut Yoghurt
1/2 cup frozen raspberries
8 of Kez’s Kitchen Raw Cookies (Choc Nut or Peanut
In a food processor, add yoghurt and raspberries. Blend until smooth.
Transfer to an airtight freezer-safe container and freeze for 4-6 hours.
With a hot spoon scoop tablespoon sized balls of frozen yoghurt and
squash between two of Kez’s Kitchen Raw Cookies.
Notes: The sandwiches with hold better if the cookies are cooled slightly
in the fridge to stop the frozen yoghurt from melting straight away between them.
